I absolutely LOVE my Instant Pot!! It allows me to make all of my slow cooker meals in a matter of 20-30 minutes. Not only does the Instant Pot cook everything in a fraction of the time, but all of the meals taste like they have cooked all day! This has given me so many more options for weeknight meals and my family is loving all of the variety we have now.
All of the recipe links listed below are for my slow cooker recipes, but there is a new section in the directions area of the recipe that will tell you how to make them in the Instant Pot. To pressure cook, you just select the setting on the Instant Pot for the meat/protein you are making and use the pre-programmed time. It doesn’t get much easier than that! You also still have the option to slow cook in the Instant Pot if desired.
Mexican food is such a great candidate for the Instant Pot because the typical ingredients in Mexican food have amazing flavor to begin with. So when those ingredients are cooked in a pressure cooker it just enhances the flavor so much, making these Chicken Fajitas taste amazing!
This white bean soup makes a regular appearance at the dinner table in our house. I love it, my husband loves it, and most importantly my toddler loves it! It’s warm, creamy, and super easy to make.
This gluten free and dairy free beef and bean chili was exactly what I was looking for in a good traditional chili. It’s amazing paired with my cornbread muffins and could be used as a base to make all different kinds of unique chili recipes.
I absolutely love how delicious and easy it was to put together this BBQ chicken and that included making a homemade BBQ sauce! The sauce takes about 15 minutes to make and then you just throw the chicken and sauce in the Instant Pot and let it cook on the poultry setting for 20 minutes.
This gluten free, dairy free, and soy free teriyaki chicken tasted so much better than it used to when I would use the store bought sauce. I love making my own sauces at home so I can control exactly what goes in it, reduce the sodium, and adjust the flavors to get it exactly how my family likes it.
This black bean soup is so easy to make, it’s super healthy, and the flavors are crazy good. I’m still amazed every time I make it in the Instant Pot just how much flavor is possible in such a short amount of time.
Enchiladas are one of my favorite meals ever! I think one of the biggest reasons is because of the enchilada sauce. I could eat it by the spoonful! So imagine how excited I was to come across the idea of enchilada soup. I get to eat enchilada sauce by the spoonful and not have my husband look at me strange!
This gluten free Beef Stew is so hearty and tastes wonderful! After the beef has been pressure cooked it basically falls apart in your mouth and the flavor is just astounding. Potatoes, carrots, celery, onion, beef, and creamy gravy, not sure it gets much better than that!
This Avocado Chicken Salad is so easy to make, super healthy, and extremely delicious! It’s also Gluten Free, Dairy Free, and Egg Free. You can eat it with gluten free taco shells, over gluten free tortilla chips to make nachos, on top of a salad, or even all by itself. It’s that good!
This chicken taco chili is SO tasty and I love how convenient it is. There really isn’t a whole lot to it and since it’s an Instant Pot meal, you just throw all the ingredients in and it’s ready in about 20 minutes. It’s also so warm and comforting that I forget how healthy it is while I’m eating it.
If you are still on the fence about purchasing an Instant Pot, I can tell you that it is absolutely worth the investment. The convenience alone is worth it, but it also has so many other features. Below is the Instant Pot that I received for Christmas last year that changed how I cook. I recommend this model for anyone wanting to purchase an Instant Pot.
