When I first found out about my food allergies, I did hours and hours of recipe research to figure out how to eat gluten free, dairy free, and egg free. I kept coming across all different kinds of vegan meals that I had never even considered before. I was always under the impression that to have a complete meal, you had to have some sort of meat included. That is just not the case and most of the time the vegan meals I was coming across were much healthier options than the traditional recipes I was used to.

I’m here to tell you that falafel is something you NEED in your life! It is bursting with flavor and has a crispy outside and soft inside that just makes it so delicious. Serve this on your favorite pita bread, with some quinoa, or just eat it by itself. It’s that good!
I couldn’t believe how easy this Mexican Beans and Rice recipe came together and I almost always have the ingredients needed on hand. All you need is some cooked rice, black beans, onion, garlic, tomatoes, limes, a little vegan butter, and seasonings. Super easy and super healthy.
When this pizza crust came out of the oven, I’m pretty sure I did a happy dance in my kitchen. When I cut into it, it wasn’t a gummy mess like my past gluten free pizza experiences, it actually looked like bread! You can see the little air pockets in it and the bottom crisped up beautifully.

These gluten free and vegan “Meatballs” turned out amazing! The texture was very similar to a traditional meatball for me which was really exciting and they had SO much flavor. I feel like anytime you stumble across a recipe that is a healthier version of something and it tastes similar to the original recipe, that is a huge win.

The gluten free and vegan biscuits that go with it are incredible, add some mushroom gravy, navy beans, and veggies and you’ve got yourself a delicious gluten free and vegan meal.
The recipe I am sharing today is a super easy recipe for Mexican zucchini boats. Quinoa, salsa, black beans, taco seasoning, zucchini and that’s it! The best part is you can add or change ingredients as much as you want and they will still be delicious. Throw in some corn, bell peppers, fresh cilantro, whatever your family likes best!
