Banana Nut Muffins – Gluten Free, Vegan, & Refined Sugar Free

These gluten free, vegan, and refined sugar free banana nut muffins are super easy to put together and have a delicious banana bread flavor! They are made with almond flour and oat flour making them a healthier muffin option.

Banana Nut Muffins - Gluten Free, Vegan, & Refined Sugar Free

Banana bread has always been one of my all time favorite breakfast foods, but sometimes I want something that bakes a little quicker and is a little more portable.  

These gluten free, vegan, and refined sugar free banana nut muffins are just the thing!  They are super easy to put together and have that delicious banana bread flavor that I wanted.

I also love that they are made with almond flour and oat flour making them a healthier muffin option.  

The inspiration for this recipe actually came from my mother in-law which is why my daughter and I refer to them as ‘Nana nut muffins.  

My family has been extremely supportive since I found out about my food allergies and my mother in-law always makes sure there is something for me to eat when we come to visit.  

This isn’t an easy task if you aren’t used to cooking this way, but she seems to pull it off with no problem at all.

They came down to visit a while ago and she brought these gluten free, vegan, and refined sugar free banana nut muffins along for us to have.  

It was extremely thoughtful and I was so excited because they were delicious!!  I used to be appreciative when people made me food before allergies, but now that I have to make everything from scratch, people making food for me is pretty much the nicest thing you can do! ?

My mother in-law left me the recipe and I made them exactly how the recipe called the first time.  

They were delicious and we ate them all in one day, but it didn’t quite make enough batter for 12 full muffins like I wanted.  There were also a few other tweaks I wanted to make so I made another batch the very next day and they were perfect!  

My daughter also loves these muffins and has been requesting them every morning.  So they are definitely toddler approved.

Banana Nut Muffins – Gluten Free, Vegan, & Refined Sugar Free

Ingredients

Dry Ingredients

  • 2 cups oat flour (gluten free)
  • 1 1/3 cup almond flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 3/4 tsp salt
  • 3/4 cup chopped walnuts (optional)

Wet Ingredients

  • 3 tbsp coconut oil, melted
  • 3 bananas, mashed
  • 3/4 cup applesauce
  • 4 tbsp maple syrup
  • 2–3 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, add all dry ingredients except walnuts and whisk until combined.
  3. In a large bowl, mash bananas with a fork or potato masher.
  4. Add the rest of the wet ingredients to the mashed bananas and mix well.
  5. Add the dry ingredients to the large bowl of wet ingredients and mix together.
  6. Stir in the chopped walnuts.
  7. Scoop mixture into a muffin pan and fill about 3/4 of the way full (you can use muffin liners if desired).
  8. Bake for 17-20 minutes.
  9. Allow muffins to cool before serving.
