Chocolate Chip Oatmeal Energy Bites

Ingredients

  • 1 cup gluten free quick cooking oats
  • 1/2 cup flax seed meal
  • 1/2 cup peanut butter
  • 1/4 cup honey (you can use agave if you are strict vegan)
  • 1/2 cup vegan dark chocolate chips (I use “Enjoy Life” brand vegan chocolate chips)
  • 1 tsp vanilla extract

Instructions

  1. Add all ingredients to a large bowl and stir to combine.
  2. Refrigerate for 15 minutes. Roll into 2″ sized bites.
  3. Store in an airtight container in the refrigerator.
