Slow Cooker or Instant Pot Pepper Steak – Gluten Free, Dairy Free, Soy Free

Ingredients

  • 1 1/2 lbs beef sirloin, cut into thin strips
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 large onion, cut into thick strips
  • 2 cloves garlic, minced 
  • 1/3 cup coconut aminos (or other gluten free soy sauce substitute) 
  • 2 tsp coconut sugar (or brown sugar)
  • 1/4 cup beef broth
  • 1/2 tsp ground ginger 
  • 1 tbsp cornstarch (optional)
  • 1/4 cup water (optional)
  • Rice for serving

Instructions

To Make Pepper Steak in the Slow Cooker:

  1. Add all ingredients except the water and cornstarch to the slow cooker.  Mix to evenly coat the meat.
  2. Cook on low for 6-8 hours or high for 3-4 hours.
  3. Optionally mix together the cornstarch and water in a small bowl when the slow cooker has about 20 minute left on the timer.  Add the cornstarch mixture to the slow cooker and stir to combine. Cook for the remaining 20 minutes.
  4. Serve over rice.

To Make Pepper Steak in the Instant Pot:

  1. Add all ingredients except the water and cornstarch to the Instant Pot.  Mix to evenly coat the meat.
  2. Close the lid on the Instant Pot and make sure you are NOT venting.
  3. Select the “Manual” setting and set the pressure to “High Pressure”.  Set the time to 20 minutes.
  4. Optionally mix together the cornstarch and water in a small bowl.  Once pressure is released, add the cornstarch mixture to the Instant Pot and stir to combine. Close the lid and allow for 10-15 minutes on the “Keep Warm” setting for the liquid to thicken up.
  5. Serve over rice.
