I’m so excited to share all of these recipes with you today! When I first found out that I had food allergies, I was so worried about what we would eat during the holidays. Most Thanksgiving sides & desserts are filled with gluten, dairy, and refined sugar. I was certain I would just have to watch all my loved ones eat all the delicious food without me.
Well I don’t give up that easily! I knew there had to be a way that I could enjoy all of the same food that I loved before food allergies. After tons of research and learning about all kinds of allergy substitutions I was finally able to come up with recipes for all of the amazing holiday food that I loved. I’m still learning and always adding to my list of recipes, but today I am sharing all of the must haves (at least for me) for a holiday meal.
Now I know a lot of you are probably saying “how can you have this post without including mashed potatoes?!” I know, I know, and I will share a proper recipe with pictures and all before Christmas I promise! In the mean time, I will let you know how I make mashed potatoes (informally) during the holidays if you don’t already have your own recipe.
3 lb of russet potatoes, peeled and cut into cubes
1 cup low sodium vegetable broth
1/2 cup vegan butter (we use “Earth Balance”)
1/2 tsp garlic powder
salt and pepper to taste
Add the peeled and cubed potatoes to a large pot of boiling water and boil for 15-20 minutes until a fork slides through the potatoes with ease.
Drain the potatoes and return to the pot. Add the remaining ingredients to the pot and mash the potatoes with a hand mixer or potato masher.
